Why does current go off sometimes when the ignition is turned on?

We assume by ‘current’ you allude to the electrical circuit that breaks when the ignition is put on. It takes a fraction or even a few seconds for the engine to whirr when the ignition is put on, and so the electrical circuit that comes to life at the start of engine, takes a few seconds to complete.
