What is the saddle height of Honda Hornet 160R and how can I reduce it?

The seat height of Honda Hornet 160R is 780mm (around 2.6 feet)

You have only mentioned the width of the tyre which you want to fit on the rear wheel of Hornet and haven’t mentioned the diameter. Bike’s tyre should not be replaced with a different width and diameter tyre and lot of things you must know before you go for such modification like: a tyre grows at speed, temperature and centrifugal force cause a spinning tire to be measurably larger than one at rest. Tires that are too wide can hit swingarms, chains, or driveshafts and can change gearing ratios and speedometer readouts, and can also contact fenders or swingarms. The designers who engineer bikes usually are highly trained, and they apply that training to find a tire combination that accents a vehicle’s virtues, and minimizes its shortcomings, so our advice for you is not to experiment with fitting a different dimension tyre, the tyre designed by manufacture is the best for your bike.

You can decrease 2-3 inch saddle height of the bike by removing some foam from the seat, but don’t remove that much which will make riding uncomfortable.
