Please let me know where the radiator cap for the Ford EcoSport is. Also, is it normal that when the AC is running, it doesn’t automatically stop at the desired temperature and restart?

The radiator cap on the Ford EcoSport is on your left side when you open the hood. When the hood is opened, then see in the line of the steering wheel and you’ll see a decent sized round cap on a transparent plastic container sort of a fitting.
For the second part of your question; the AC in a car turns off and starts again when there is climate control in the car. In case there is climate control in your vehicle, check to see if it is turned on. If it is and yet this isn’t happening then you should take the car to your service center. However, if there is no climate control in the car then there is no way in which you can control the switching on and off of the AC at a particular temperature.
